How are condiment dipensers cleaned?

Cleaning Condiment Dispensers

Commercial condiment dispensers are some of the most recognized restaurant supplies. The condiment dispensers are convenient for mixing and serving salad dressings, mustard, ketchup, mayonnaise and more in the food prep area. Most dispensers consist of a plastic jug with a pump that screws into the top of the jug. Unlike some restaurant supplies, cleaning these dispensers properly is a little less convenient than their usage – particularly the thin tubing and mouth of the pump unit. Jugs should be washed in the dishwasher and soaked in sanitizing chemicals at least once or twice a week. The pump unit is most effectively cleaned by soaking in hot, soapy water. Scrub any dried condiment off the mouth of the pump. Once you've soaked the pump, stick the tubing in the water and work the pump until the water shoots through it, thereby cleaning the tubing thoroughly. The pump, too, should then be soaked in sanitizer. Repeat the pumping action to filter through the tubing. Pump clean water through afterwards and let all pieces air dry.
