Thermal shock will cause your glassware to crack and ultimately break. You never want to serve your customer's beverages in beer mugs or wine glasses that are exposed to thermal shock. Thermal shock occurs when glassware is subjected to two temperature extremes in a short amount of time. To prevent thermal shock, never serve drinks in glassware that has come directly from the dishwasher. Let glasses set at room temperature before they enter the dishwasher. Likewise, beer and wine glasses should never be served to customers without first reaching room temperature. If necessary, stock up on additional glassware to ensure that thermal shock will not occur.
